Carus Vini is a small organic Chianti Classico producer. It is a family estate and we produce only high quality wines. We aim at the perfect balance between vegetative growth and productivity and, to this purpose, we combine traditional techniques with some modern technologies. We work maintaining maximum respect for the environment : we don't use chemical pesticide but only copper between vineyards rows. Besides, photovoltaic panels produce most of the energy for the cellar equipment and our meteo station allow us to reduce treatments.

The company is located in the heart of the Chianti Classico area between San Casciano and Mercatale in the Val di Pesa, in one of the best production areas for this splendid wine.

The vineyards

To date, 5.5 hectares of vineyards have been progressively replaced with new vineyards that will go into production from 2019. The vineyards are located at a height of around 170 to 300 meters above sea level.

The vines present on the farm allow a harvest distributed throughout the season starting from Shyraz and Merlot , passing to Sangiove if and ending with Cabernet Sauvignon.

The training system is both cordon and Guyot, the cultivation density is 3,500 - 5,000 plants per hectare depending on the area and grape variety. Since the vineyard takes several years to reach its qualitative maturity, we try to replace the individual plants - which for various reasons cease to produce - without having to resort to uprooting entire vineyards. This implies a considerable work of identification of the plants, their uprooting and the single substitution as do the best French vigneron.

The territory

The area is purely hilly characterized by moderately clayey and skeletal soils. The different exposures allow to obtain a particular organoleptic complexity in the grapes dedicated to the production of excellent wines.

The climate is continental with even cold winters below 0 ° C and summer temperatures that can exceed 40 ° C, and an average annual temperature of 14.5 ° C.

On average, annual rainfall is 900 mm mainly in the period October - April .

The Winery

The cellar has a dozen temperature-controlled steel vats, both cylindrical and conical, many of limited size, to optimize the loads by keeping the various types of wine separate, also based on the origin within the company.

In the cellar we vinify all the grapes produced in our vineyards, and a part of the wine is sold to other producers. The product with the best quality, however, is matured both in steel vats and in 225-liter French oak barrels or 500-liter tonneau (both mainly medium-roasted Allier).

To pump the wine we use pumps that minimize its physical changes. The bottles are shipped in high-quality, horizontal containers to reduce transport damage.
